Of the weekend and an overview of the coming week.
Saturday was a busy day. Country Chic and I headed to the arena in town so she could ride with the horse group. The weather was well....very, very cold and windy!
The group worked on ground work and showmanship for an hour.
Gizmo needs to drop a few pounds..lol
Then it was time to saddle up.
The next hour or so was spent riding and working on learning patterns.
The young lady in the center of the ring is Gizmo's owner. She is home from college on spring break and has graciously offered to spend time working with Country Chic so that she can pass her riding levels test on Friday.
K adopted Gizmo from a wild mustang round-up. He was out of a mustang herd in Oregon.
She trained him on her own! Gizmo is an amazing horse!
K and Gizmo have won many shows throughout the western states and they have competed and taken top honors in many mustang shows as well.
Gizmo will once again return to the 4-H horse show this year with Country Chic as his rider and K as their coach.
After spending four hours in town, we hit the road again and headed home.
We still had the usual housework and dreaded laundry to get done.
After dinner we sat down to relax. Being outside in the cold and wind for four hours really wiped us out!
It was off to bed early...very early for us!
Sunday dawned windy, cold and rainy. It didn't even feel like the first day of spring.
After a breakfast of pancakes (gluten free of course), bacon and fresh strawberries, it was time to tackle the next big task on my list.
My county 4-H program is hosting the State 4-H Leaders' Forum this coming Friday and Saturday.
Our county is in charge of dinner Friday night. We are expecting to serve 125 people.
We decided on enchilada casseroles for the dinner.
A few weeks back one of the 4-H cooking groups made 10 casseroles for us and put them in the freezer.
Since the enrollment for the event kept climbing, it was decided that more food would be needed.
So Sunday I tackled making those extra casseroles. Since the meat and cheese casseroles were already made, I made five cheese casseroles.
I didn't take one picture of the mess I made while making these. You would have gotten a laugh out of it! *smile*
I did take a picture of the finished product though.
I spent the last part of Sunday afternoon relaxing and catching up on a few shows on the DVR.
The rest of the week is going to be CRAZY!
The Big State event kicks off on Friday morning and runs through Saturday night.
In the meantime, I still have a long list of tasks at work to accomplish before Friday.

You are AMAZING! Those casseroles look FANTASTIC! Reading about all that you accomplished and what you will accomplished exhausted me --so I went and took a nap for you :0)

Mmmm! Everything looks good except all those olives...ewwww! I don't do olives. I'd be plucking 'em off and flinging 'em at someone. (evil grin) lol!
Sure hope the dinner went well and Country Chic passed her riding levels test. I'm in love with Gizmo!
A few people have told me that Apache looks like she has mustang blood. My farrier calls her his little mustang. So it is ironic to me that you mention that Gizmo is a mustang. Wow! Gizmo and my Apache even look alike!
