Hayman has a love for Lemon Meringue pie, so some of the beauties above became these below...
My dad and brother also love Lemon Meringue pie. My mom makes the best lemon pies ever and I learned from the best! I gave one of the pies above to Hayman's boss, Mr. B. and we ate the other pie. Lemon Meringue Pie
1 cup sugar
1/4 cup corn starch
1 1/2 cups cold water
3 egg yolks, slightly beaten
grated peel of one lemon
1/4 cup lemon juice
1 Tblsp. butter
1 baked 9 inch pie crust
3 egg whites
1/3 cup sugar
Preheat oven to 350 degrees. In medium saucepan combine 1 cup sugar and corn starch. Stir in water until smooth. Stir in egg yolks. Stirring constantly, bring to boil over medium heat; boil 1 minute. Remove from heat. Stir in lemon peel, juice and butter. Spoon hot filling into pie crust. In a small mixing bowl, beat egg whites at high speed until foamy. Gradually beat in remaining 1/3 cup sugar; continue beating until stiff peaks form. Spread meringue evenly over hot filling, sealing to edges of crust. Bake 10 minutes in preheated oven or until golden. Cool on wire rack, refrigerate. Makes one yummy pie! Enjoy!

yes, I know how amazing those backyard California lemons are. my friend used to ship us lemons by the box load. they could be those delicious Meyer lemons.

The love for Lemon Meringue Pie must run in the family :-) I wonder if this is the same reciepe my mom uses....She would always make a Lemon Meringue Pie, but along with it she'd often create the Chololate Meringue Pie for me...

Several of my rellies in Calif. have lemon, orange and avacado trees in the yard. Many of their neighbors just let the fruit fall to the ground and rot...considering the trees as a pest.
gah! Can you imagine?
My rellies give much of their friut away or let it fall to the ground, too. There's just too much to eat on their own. Makes me a little bit crazy.

I love lemon Merinque (oh well you know what I mean) pies. I made mine the lazy way out of the box and added eggs and water, cook and pour in crust and bake. I can't imagine what fresh lemon pies taste like. But I can feel them melting in my mouth right now.....
