Tasty Tuesday

I made this for dinner a couple of Sundays ago.
It is an easy recipe and turned out great!

It came from this cook book.
I love Stephanie O'Dea and her blog http://crockpot365.blogspot.com/

Easy Peanut Butter Chicken

1 1/2 pounds boneless, skinless chicken, cut in chunks
1/2 cup peanut butter (creamy or crunchy, I used creamy)
1 red bell pepper, seeded and sliced
1 large onion, chopped (I didn't use the onion)
1 Tblsp. ground cumin (I used 1/2 Tblsp.)
1 lime, juiced
1/4 cup gluten free soy sauce (you can use regular soy sauce if you are not gluten free)
1/2 cup chicken broth

Use a 4 quart slow cooker. Put the chicken in the bottom of the cooker. Add the peanut butter. Put in the vegetables and cumin. Squeeze in lime juice and add soy sauce and chicken broth. Stir to combine. Cover and cook on low for 6 to 8 hours, or on high for 4 hours. Serve over rice. I added roasted broccoli and red pepper flakes and topped with a dab more soy sauce and a squeeze of lime...Yummy!
