Tasty Tuesday ~ Taco Soup

Chilly weather calls for a soup that is filling and has a hint of spicy heat!

~Taco Soup~

1 pound lean ground beef
1-2 cloves of garlic finally chopped or grated
1 small onion - chopped fine (I omit the onion because onion does not like me)
1 16 oz. can white hominy (rinsed and drained) or you can use 1 can of whole kernel corn
1 16 oz. can diced tomatoes with juice
1 16 oz. can beans (kidney, pinto, black beans, the choice is yours)
1 pkg McCormick taco seasoning (mild or spicy depends on your taste)
2 cups beef broth or a tad more if you like lots of broth (I use a gluten free broth)

In a large soup pan brown the beef until no longer pink, add onion and garlic and saute for a bit. Add hominy, tomatoes, beans, taco seasoning and broth. Bring to a boil, then turn down heat and simmer for 25 minutes. Ladle into bowls and serve with your choice of toppings.
*Frito's brand corn chips
*Salsa
*diced jalapeno pepper
*diced green onion
*chopped cilantro
*shredded jack cheese
*dab of sour cream
These are our favorite toppings.


The ingredients I use for this soup are gluten free, but you need to read labels to make sure there is no gluten in your products if you are following a gluten free diet and making this soup.
*I use McCormick mild taco seasoning ~ not all of their seasonings are gf, so you need to read the label!
*I use Bush's unseasoned kidney or pinto beans
*I use Pacific beef broth ~ it is gluten and MSG free

I made this for dinner last night! It hit the spot and warmed us right up!

Mmmmm! I've made this same recipe a few times...and it is sooooooo yummy!

Of course, we always add green chile, too. :D
