Here it is the last day of February! Another month of 2011 gone by, done, finished, over!
We watched the Oscars last night.
It has become a tradition over the last seven years or so.
I haven't seen any of the movies that were nominated this year, but I enjoyed tuning in to watch all the glitz and glam of the evening!
You couldn't pay me to be an actor...there is no way I could walk a red carpet and not have a panic attack!
(I'm prone to those you know!)

I fixed a "fancy" dinner last night in honor of the Oscars.
On the menu: Seared pork tenderloin, individual potatoes gratin, roasted brussel sprouts and for dessert...
These lovely lemon meringue cups.
I still haven't found a gluten free pie crust recipe that I like, so in loo (is it lew or loo..awe heck I don't know) of pie crust, I just made the regular filling recipe and put it into custard cups.
Worked perfectly!
They were a little bit of heaven!
A decadent lemony treat!
Citrus in winter adds a bit of sunshine to the world!
Lemon Meringue Pie Cups
1 cup sugar
1/4 cup Corn Starch (I use Bob's Redmill to insure it is gf)
1-1/2 cups cold water
3 egg yolks, slightly beaten
Grated peel of 1 lemon
1/4 cup lemon juice
1 tablespoon butter
3 egg whites
1/3 cup sugar
Preheat oven to 350°F. Combine 1 cup sugar and corn starch in medium saucepan. Gradually stir in water until smooth. Stir in egg yolks. Bring to a boil over medium heat, stirring constantly, and boil 1 minute. Remove from heat. Stir in lemon peel, lemon juice and butter. Spoon hot filling into 6 custard cups.
Beat egg whites in small bowl with mixer at high speed until foamy. Gradually beat in remaining 1/3 cup sugar; continue beating until stiff peaks form. Spread meringue evenly over hot filling, sealing to edge of cup.
Bake 10 minutes or until meringue is golden. Cool on wire rack at room temperature for 30 minutes; refrigerate for 3 hours before serving. (Or leave on counter to cool and eat right after dinner!)
The above recipe is actually the original Kingsford Cornstarch recipe that I have been making for years!

I love lemon meringue pie, but haven't never much cared for the crust of any pie. Such a great idea to serve them in custard cups!
And they look so fancy, too!
I've always loved anything lemon. My family in California has two lemon trees in their backyard and they...gasp!...allow those big beautiful lemons to just fall on the ground and rot. Isn't that terrible?!
Their neighbor has an avocado tree and does the same thing....let them fall and rot. With the price of avocados being so high, too. Crazy!

I love watching the Oscar's for the gala event that it is. I did see a few of the movies and they're good.
Oh, I made a special meal for the occasion as well: Good Ole Mac & Cheese. My specialty, sadly. *grin*
I have to say, 127 Hours, is THE best movie I've seen in years. Highly recommend it, although you may have to turn away for a small portion of it, like I did. Very small part though, in the big scheme of things.
